To kick off the summer, Veganizer PDX teamed up with Best Friend juice cart for a vegan parfait workshop! Parfaits are a wonderful way to start the day, and Best Friend selected ingredients that make your heart, body, and mind happy. Best Friend's Margaux Muller lead the workshop, sharing the health benefits of the parfait ingredients while attendees assembled their own healthy breakfast treat. If you missed the workshop, don't worry... you can whip up your own parfaits at home with these easy recipes that Margaux kindly shared with us! Vegan Coconut Crème 1 can coconut milk 1 tablespoon vanilla 1 tablespoon coconut palm syrup* Shake up in a squeeze bottle and keep in the fridge for 2-3 days. Chia Pudding 2 tablespoons chia seeds 3/4 cup alternative milk of your choice 2 teaspoons vanilla 2 teaspoons coconut palm syrup* Shake up in a squeeze bottle and add to any breakfast of your choice! It pairs well with granola, yogurt, milk, anything that has a nice crunch or cream to it! Keeps for 3-4 days. Cosmic Crunch Granola Available for sale online: www.margalaxy.com 1.5 cups almonds, soaked overnight 1.5 cups walnuts, soaked overnight 1/2 cup maple syrup 1 dash of salt 1 tablespoon maca powder 1 tablespoon cinnamon 1 table flax meal 1/2 cup chia seeds 1 teaspoon vanilla 1/2 cup coconut shreds 3/4 cup goji berries Rinse the nuts real well in a strainer. In a food processor grind up the nuts oat sized, then add in the rest of ingredients. Then stir in coconut shreds and goji berries. Spread on parchment paper to prepare for dehydration. Dehydrate for 24-36 hours, then serve (with almond milk :D) and enjoy! *To make coconut palm syrup: 1:1 ratio hot water to coconut sugar
